Chicory is not a filler. At twenty percent it thickens the decoction, holds it against hot milk, and adds the faint sweetness that makes filter coffee taste like filter coffee rather than like coffee served differently.
This is the ratio to start with if you have never brewed a decoction. It is forgiving about timing in a way the pure blend is not.
